Today I wanted to share a yummy recipe with you!
Josh and I have been on a low carb diet since Labor Day. It’s definitely had moments where it’s been hard. I LOVE bread and pasta and rice and sweets and all the things you can’t have when doing a low carb diet. However, Pinterest has been a life saver and has TONS of amazing low carb recipes!
It’s been an adventure trying new recipes with new ingredients. I’d love to share some of our favorites here occasionally.
So, let’s get to it! I got this recipe off of Pinterest, I believe. I can’t find the original post I found this recipe on… I had just taken a screenshot of the ingredients and directions on my phone. But if I do, I’ll edit this post and add a link!
Cinnamon Scones with Cream Cheese Icing
Ingredients
Scones
2 cups almond flour
3 tbsp sugar substitute (we used stevia)
2 tsp baking powder
1/2 tsp salt
1/4 tsp ground cinnamon
1 large egg, slightly beaten
1/4 cup butter, melted (you could also use melted coconut oil instead)
2 tbsp heavy cream
1/2 tsp vanilla extract
Filling/Topping
3 tbsp sugar substitute
2 tsp ground cinnamon
Icing
(We love us some cream cheese icing in this house, so I doubled the amounts below. But do as you please)
1 oz cream cheese, softened
1 tbsp heavy cream
1/2 tbsp butter, softened
1 tbsp powdered sugar substitue
1/4 tsp vanilla extract
*Not going to lie, we didn’t have a powdered sugar substitute. Since it was such a small amount, I used regular powdered sugar (bad low carber, bad)
Instructions
Scones
- Preheat oven to 325F. Line baking sheet with parchment paper.
- Which together almond flour, sweetener, baking powder, salt, and cinnamon in a large bowl.
- Add in egg, butter, cream, and vanilla extract until dough forms.
- In a small bowl, whisk together filling ingredients. Sprinkle half of filling into dough and mix in.
- Place dough onto parchment lined baking sheet, and shape into a circle approx. 7-8 inches in diameter. Sprinkle with remaining topping.
- Slice into 8 wedges (we used a pizza cutter) and space evenly around the baking sheet.
- Bake for 20-25 min, or until scones are firm and lightly browned. Keep an eye on them so the bottoms don’t burn! Once finished, place on a wire rack to cool.
Icing
- Beat cream cheese, butter, and cream together until smooth.
- Add in powdered sweetener and vanilla extract until combined.
- Pipe or spread onto scones
Note-
When I started making these, I realized that I had accidentally bought almond flour with almond meal instead of just almond flour. The scones still turned out really good, but had a slightly more crumbly texture than if it had just been regular almond flour. The meal also probably made the scones a little darker in color. So, next time I will make sure to pick up just almond flour. Just don’t be silly and buy the wrong thing like I did.
Also, in case you were curious, we bought our almond flour (with almond meal… stupid me..) at Walmart. They have regular almond flour too, so check the bag so you don’t end up with almond meal.
